Remarks: This steel is by far the most effective way to quickly straighten and hone a rolled edge on your prized kitchen or butchering knives. The trick is to start with a good sharp knife from the beginning and use the steel as you are cutting and prepping food in order to keep a nice sharp straight edge. Use very light pressure on the last few strokes and make sure to feel both sides of the blade bevel to ensure you have rolled the edge back nice and straight - also called honing the edge.
