Remarks: Not as sharp as I expected did the paper test had to really had to saw into paper than when cutting through it was choppy not a clean cut For the price Its ok

Remarks: I own a few restaurants, and I have purchased about of dozen of these to use in the kitchen. I like that they provide a solid grip for my employees, and the edge stays sharp. The design is perfect for the prep work we do, and the hollow edge seems to make smooth cuts.

Remarks: This knife is truly a pleasure to use. It has a soft-grip handle and a wonderful balance. It became an immediate favorite. (I have A LOT of kitchen knives, including a half dozen chef knives..... but this is the one going to the desert island with me!
