Remarks: What a nice blade. I was looking for something a little meatier to manage fruit like watermelons and pineapples - and meat of course - and this blade easily gets the job done. Nice finish, the Japanese style handle is just right, and hardened material. It is sharp out of the box, but I will put the wicked edge on it, and with hardened material it should hold an edge. I look forward to many years of good service. I chose MadCow because they are NOT Amazon, and had that mom & pop feel. Service was great, no problem ordering, and I had my package within 2 days - which is normally a 4 day trip. I can see doing business with them in the future.

Remarks: Great knife. Fell in love with it as soon as I saw it. Unique design, unparalleled craftsmanship. The handle is perfect and the balance is spot on. I’ve been a Chef for 20 years and I prefer German steel over Asian, but always loved the look and style of Asian. Now I got the best of both worlds. I find myself reaching for it more and more.
