The Jero Wide Blade Concavo Serrated Slicer with the hollow edge (Granton Edge Style) was designed by Mad Cow Cutlery to meet the requests of many of our commercial bbq restaurants and bbq teams that liked the wide blade slicers with the hollow edge, but were looking for a sharpened serrated model instead of the straight edge found on all the other brands.
Handle is injected molded onto the tang and a portion of the blade using a slightly textured, dense polymer that provides a strong and long lasting handle that is easy to grip and easy to clean. Using feedback from our commercial accounts, the handle we ergonomically designed to be comfortable, and provide a secure grip.
Blade is constructed German high-carbon stainless steel - the same steel found on many of the higher priced German, Swiss, and other European brands. The cutting edge features a sharpened serration - meaning that one side of the edge is sharpened along the whole side, including the peaks and valleys of the serrated edge. The spacing was increased to allow for a smoother cut without the aggressive product tearing of many serrated knives. To reduce friction between the knife and product, we added hollow areas along the side of the blade. These areas reduce contact surface allowing for a smoother cut. The hollow edges also make the blade lighter, which is important on larger blade knives, resulting in better balance and control of the blade.
