Ergogrip line from F. Dick was designed for the serious butcher looking for a high-end work knife that was built to provide comfort and dependability. Ergogrips are constructed of X55CrMo14 stainless steel with a Rockwell hardness of 56. Handle is constructed of Polyamides--nylon polymers known for their resistance to wear and abrasion, heat tolerance and resistance to chemicals.

Remarks: Very sharp for meat processing plant inspection job. Had to get use to the 15 degree angle during sharpening and steeling, but holds it's edge and should have a better life span than my previous Victronix of 4 years. But I stone sharpen it myself and is not constantly ground down by the Knife room. My wife is skiddish of it though because it's too sharp and she has cut herself with the additional 6 inch one I purchased at work for home use.
