Remarks: Great knife Anthony Bourdain mentioned this knife in his break out book Kitchen Confidential . It is what he says it is. I have many high end knives. Anryu, and Takeda are my favorite, but if I want to go at tomato or a thick skinned pepper, there isn't a better knife to grab. Remarks: It's such a pleasure to use this knife on lemons, cucumbers and tomatoes. Cuts without effort, like going through butter. Comfortable to use.

Remarks: I purchased this at the recommendation of a chef that said this would probably be the only knife I needed in the kitchen. He was right. This little baby is sharp, and stays sharp and cuts with ease. I love the offset design of the handle since it allows me more room with my big hands to slice without my fingers hitting the cutting surface.
