Knife for soft cheeses. The fork shaped tip is used to move and taste the cheese. The holes on the blade help prevent the cheese from sticking to the knife. The blade's lower position compared to the handle, helps to avoid touching the work surface with your hand while cutting.

In 1962, Giulio Gianola founded Bharbjt, a craft workshop, that manufacture cutting tools and cutlery. The factory is in Premana, in Alta Valsassina, where, since the times of ancient Romans, man mined and worked iron for producing cutting and farm tools.

Remarks: We purchased these for our cheese shop in our sampling area. You would think that all cheese knives are the same, but that is incorrect. From blade quality to work done on the handle, it is easy to tell that this was made in Italy and not China like many of the cheap knives we have purchased in the past. We also purchased some of their wood handle knives and wire cheese knives. All of them are really good quality.
