Table cheese knife with voided areas on blade, used to cut soft and very soft cheese. Voided areas on the blade prevent cheese from sticking to the side of the blade. The blade, in a lower position compared to the handle, helps prevent touching the work surface when cutting. In 1962 Giulio Gianola founded Bharbjt, a craft workshop, that manufactures cutting tools and cutlery. The factory is in Premana, in Alta Valsassina, where, since the times of ancient Romans, man mined and worked iron for producing cutting and farm tools. The company is specializes in the manufacturing of cheese knives, cheese tools and tools for the dairy industry.
