The F. Dick multicut flat steel is a multi-purpose steel for the busy butcher or chef. The steel features wide grooves down the length of the steel allowing for extra grinding when strong pressure is applied. The rest of the steel features a fine cut--meaning it isn't perfectly smooth or polished, but rather features really fine grooves running the length of the steel, which are only visible when viewed up close.
