The blade is constructed of high-carbon stainless steel for edge retention, without being too hard to sharpen easily. The handle is constructed of soft rubber compounds that include textured rings--providing amazing grip, even when wet or coated with fat. The handle and blade were designed to provide natural cutting motion, while eliminating obstructive guards. Handle features a thumb rest on the butt of the handle, allowing for control when boning.
Each knife features a colored dot on the end of the handle that represents the knife's flexibility. The edge of the blades aren't polished as smooth as most knives. The grind marks are present forming a great bite when cutting. This is one of our sharpest stamped blade knives right out of the package.
Blue dot on end of handle identifies this knife as being semi-flexible.
